Peruvian Avocado and Fried Egg on Toast


In a skillet, heat the oil over medium-low heat and fry the eggs. Place avocado slices on each piece of toast and carefully top with a fried egg. Season with salt and pepper. Serve with the mixed greens and cherry tomatoes.




3 tablespoons olive oil
4 large eggs
2 Peruvian avocados, pitted, peeled, and sliced
4 slices whole wheat bread, toasted Salt and pepper Mixed greens, washed and drained
1 cup cherry tomatoes, halved
